Gypsum is a traditional chinese technique for making tofu and is a refined food safe formula which is used as a tofu coagulant. A naturally occurring calcium sulfate, this gypsum powder is also used as food grade plasters model.

To make tofu, dissolve 3 teaspoons into half cup of hot water and stir quickly into 2 quarters of hot soymilk. Wait for 15 minutes allowing it to curdle before transferring to a tofu press.
